Flavor Profile
The 2019 J2 Cabernet Sauvignon is definition of pleasure in Napa Cabernet. Loaded with red fruits and wild forest flowers, the wine is extremely gratifying on every sensorial level, but it is really all about the silky, seamless texture. Waves of pleasure unfold as the wine evolves, flavors surfing on the fine tannins, leading to a long finish. Savory, bright, round, soft, powerful, intriguing. A truly unique wine and one that will develop over the next 25+ years.
- Vineyard Notes
The grapes from Block B2 were hand harvested at night in order to retain freshness and get the fruit in the cellar as cool as possible. The wine was vinified with classic Bordeaux techniques–wild yeast fermentation began after 5 days of cold soak and reached peak temperature of 90°F. After 15-21 days of maceration, the wine was drained directly to barrel to complete spontaneous malolactic fermentation. The wine was bottled unfined and unfiltered.
Block J2 is a rarity in Napa Valley- it’s planted to the See Clone, one of only three California Heritage clones, and the only block on the Profile Estate Vineyard with that clonal selection and rootstock combination.
