Flavor Profile

Plush aromas of cassis, black cherry, perfume and vanilla are interwoven with tobacco, cedar and cocoa. On the palate the wine is dense and concentrated with a finish that is long and complex. This wine will age well for a decade and beyond. We recommend decanting in its youth.

  • From The Wine Advocate: "Another big-time winner...

“… the 2007 Profile (60% Cabernet Sauvignon, 15% Merlot, 15% Cabernet Franc, 6% Petit Verdot, and 4% Malbec) may be the finest wine I have ever tasted from Merryvale. It exhibits an opaque purple color along with classic tobacco leaf, black currant, spicy oak, chocolate, licorice, and graphite characteristics, a big, full-bodied mouthfeel, and tremendous depth, persistence, and length. This proprietary red should continue to put on weight, and last for 15-20 or more years. Very impressive!”  – Robert Parker, Jr. [97+ POINTS]
