Flavor Profile
The two best barrels in the cellar were selected to blend this exquisite representation of our Profile Estate Vineyard. Sourced from Block E, which sits on a volcanic ridge, this wine is simultaneously elegant, lush, refined, and powerful; exhibiting all the characteristics we love from the property. A savory, dense core is uplifted by natural acidity, and the evolving aromas entice you back to the glass. Notes of black fruits, chocolate, violets, leather, and savory herbs intertwine as the wine’s full bodied richness envelopes the palate. A stunning wine that will only continue to improve over the next 30 years.
- Vineyard Notes
The grapes for this Block E selection were harvested in two picks, one earlier and one later in the season, to retain natural freshness and enhance phenolic ripeness. Brought into the cellar in the early morning, the fruit from both picks was cold soaked in tank for 5 days, after which native yeasts began the fermentation. Temperatures reached a high of 90°F, then gently decreased as the wine finished fermentation. After a total of two weeks in tanks, the wines were drained to new French oak barrels to complete spontaneous malolactic fermentation. The wine was bottled unfined and unfiltered.
